There’s a special place in my heart for Mexican food.
I’ve never set foot there (God knows why though), but the flavours, the history, the products… it’s just very real and I tend to gravitate towards authenticity.
Like most people, I spent too many years buying Old El Paso tortillas, but honestly if I can without preservatives in my life I will.
So I ended up trying ways to make simple homemade tortillas and I swear, you will not go back to store-bought.
Made in the blink of an eye, warm, chewy and ever so comforting.
The dough can be frozen before you cook it so you have it on hand for those hankerings!
Makes 8 tortillas.
What you’ll need for your tortillas:
- 2 cups wheat flour (240g)
- 1/2 teaspoon salt
- 3/4 cup warm water (180ml)
- 3 tablespoons olive oil
How to make them:
- Combine flour and salt in a large bowl. Gradually add water and oil while stirring. Mix until combined.
- On a floured surface, knead your dough around 10 times or until feels homogeneous (add some flour if needed). Let it sit for 10 min.
- Divide your dough into 8 portions and roll each one out to form your tortillas until desired thickness.
- In a pan, heat a bit of olive oil. Cook tortillas in the pan one at a time, flipping them when large bubbles appear / tortillas become golden.
- Serve immediately.

Well my friends, this is where you get creative.
I personally don’t eat meat, so I can’t help the carnivores, but my go-to is red & orange peppers + chickpeas + 1/2 onion + 1 garlic clove + Mexican spice blend. Serve with homemade Guac if seasonal (2 avocados + Mexican Spice Blend + Lime juice), shredded cheddar or queso fresco, hot sauce (I love Dawson’s Garlic Jalapeno for flavour or Original Hot for big heat) and salsa.
