There’s a special place in my heart for Mexican food.
I’ve never set foot there (God knows why though), but the flavours, the history, the products… it’s just very real and I tend to gravitate towards authenticity.

Like most people, I spent too many years buying Old El Paso tortillas, but honestly if I can without preservatives in my life I will.
So I ended up trying ways to make simple homemade tortillas and I swear, you will not go back to store-bought.
Made in the blink of an eye, warm, chewy and ever so comforting. 
The dough can be frozen before you cook it so you have it on hand for those hankerings!

Well my friends, this is where you get creative.
I personally don’t eat meat, so I can’t help the carnivores, but my go-to is red & orange peppers + chickpeas + 1/2 onion + 1 garlic clove + Mexican spice blend. Serve with homemade Guac if seasonal (2 avocados + Mexican Spice Blend + Lime juice), shredded cheddar or queso fresco, hot sauce (I love Dawson’s Garlic Jalapeno for flavour or Original Hot for big heat) and salsa.
