I know making bread in any shape or size can be scary.
But believe me: this recipe is beyond simple and makes the most satisfying, warm, chewy pita goodness! Give it a shot!

What you’ll need:
– 1 package active dry yeast
– 1 cup warm water
– 2 3/4 cups all purpose flour
– 1 1/2 tablespoon olive oil
– 1 3/4 teaspoon sea salt

How to make it:
• Combine yeast, 1 cup flour and warm water in a bowl & let it sit for 20 min.
• Add olive oil and sea salt to the mixture, then stir in 1 3/4 cup flour, until mixture is homogeneous and slightly sticky.
• Knead on a floured surface for 6 minutes, then form into a ball.
• Set the dough in an oiled bowl and cover with wrap. Set in a warm space for 1h (I leave it in my over at 50°C).
• Once the dough has doubled in size, divide into 8 pieces. Flatten each piece by hand, until quite thin and drop into a pan with hot olive oil.
• Cook on either side until golden and enjoy!

Tips:
• Serve with tapenade, hummus, fresh goat cheese or a simple olive oil and herbs!
• Pitas getting stale? Use them as « pizzas » and cover them with veggies, spreads and/or cheese before putting them in the over for a couple of minutes. (I like to grate pecorino, add a filet of olive oil and some rosemary, and put under the broiler for about 1 min)
