Truth be told, I’m not a huge granola person. I’m more of a toast and tea type in the morning.
But over the years, I’ve lived with a couple of granola-fanatics, and there isn’t much I like more than cooking for good people.
This recipe here is a winner: dark chocolate, coconut, nuts, seeds… and more chocolate for good measure.
It’s nutritive, satisfying and a great snack as well!
What you’ll need:
– 3 cups of oats
– 1 cup chopped nuts (my favourite is pecan, but walnuts and almonds are also great options)
– 1/4 cup shredded unsweetened coconut
– 1 tablespoon flax seeds
– 2 tablespoons chia seeds
– 3 tablespoons coconut sugar
– 1 teaspoon sea salt
– 1/3 cup dark chocolate powder
– 1/4 cup coconut oil
– 1/2 cup maple syrup
– 1/2 cup dark chocolate chips
How to make it:
- Preheat oven at 170°C.
- In a bowl, mix oats, nuts, coconut flakes, flax seeds, chia seeds, sugar, salt and chocolate powder. Stir until everything is coated in chocolate powder.
- In a pan, heat up coconut oil and maple syrup and mix well.
- Add coconut oil and maple syrup mix to the granola mix and stir.
- Let it cool down completely, then add chocolate chips.
Tips:
– Pair it with milk, yogurt, a smoothie bowl, an acai bowl… or just snack!
– Make sure you store it in a container that will keep it crunchy!
